What’s this, you say? A recipe on the blog? You still do those?!
Yup, it’s been awhile since I last posted a recipe on here. 🙂 With Ramadan, I was only cooking and baking at night, when lighting was obviously very poor. But now that Ramadan is over, I can’t wait to share all the recipes I’ve created and discovered over the past month with you all!
These bars are ridiculously easy. I’m a big fan of easy. I especially love recipes that have ingredients that can be found in my pantry. Those recipes quickly become my favourites, since all the ingredients are readily available for when I need a quick dessert or have a baking craving (which happens quite often).
And these bars fit the bill perfectly. All the ingredients are probably sitting in your pantry right now, plus you don’t need a mixer, which is a bonus for me. Little clean up, minimal work, and ready in under 30 minutes! That’s what I call a winning dessert. 😀
Light and buttery, these Chewy Cookie Bars are delightful warm and ooey-gooey right out of the oven, and pair well with a tall glass of milk. 😉

Ingredients
- 1/2 cup butter, melted
- 1 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/8 tsp baking soda
- 3/4 cup chocolate chips
Instructions
- Preheat oven to 350 degrees F and grease a 9x9 inch pan.
- In a microwave safe bowl, melt butter in the microwave, about 20 to 30 seconds. Let cool.
- Add brown sugar, egg, and vanilla. Slowly add the flour, baking powder, salt, and baking soda, making sure to mix well.
- Add 1/2 cup of the chocolate chips into the mixture, and pour mixture into the pan. Sprinkle remaining 1/4 cup chocolate on top.
- Bake for 20 to 25 minutes, or until edges are golden. Let cool completely before cutting. Store in an airtight container.

These bars are super light, and not at all heavy or overly sweet. I think it has something to do with using only brown sugar, and no white sugar, which makes the mixture fluffy and light.
You could easily add other add-ins, like M&Ms, or other kinds of chips (peanut butter, butterscotch), but I chose to stick with chocolate chips, which makes these bars like chocolate chip cookies…except in bar form.
I made these for Eid, when my family came over and they were a hit! I went back to have seconds at one point, and they were all gone. 😀
Super easy to make, chewy on the inside, crunchy on the outside, these Chewy Cookie Bars are a winner! I know I’ll be making them again soon. I hope you try them out! 🙂
