I’m in love.
It sounds cheesy, but when it happened, it was exactly like they described in books and in movies. When our eyes first met, in that brief second, my heart melted into a puddle. It was love at first sight and I was smitten.
I never thought it would happen, but happen it did.
All day long, I think about him and his big, wide eyes and pouty lips. My heart pitter-patters at his shy smiles.ย I count the hours and minutes until I can see him again, and dread the hours and minutes until we part. I just can’t get enough of him!
I haven’t fallen in love with a boy, though, but a baby!
My cousin had a baby on Sunday, and as you can clearly see, I’m in love.
I’ve seen babies before, pinched their cheeks and cooed in front of their parents. But these ย babies weren’t related to me, and I did not see them within an hour after their birth.
But this baby I did. All weekend, my family and I waited for the arrival of the little guy, and it was with baited breath we sat in the waiting room, watching the hours tick by.
Finally, on Sunday afternoon, the day of my mom’s birthday, he finally decided to make his appearance.
The second he looked up at me with his big, brown eyes, I was a goner. When I go to see him at the hospital, I don’t want to leave. And when I do, I’m plotting ways to return as quick as possible, which is kind of hard, since he lives in another city and gas is expensive.
When I’m scanning groceries, I’m daydreaming about toys and clothes I want to buy him.
When I’m in the car on the way, I’m giddy with excitement over the prospect of holding him in my arms.
When I think about him, I’m filled with amazement and wonder at the beauty of a new life, a whole and pure soul created by God.
So you see, I’m a completely hopeless case. But in the best way possible. ๐
So what does any of this have to do with a brownie recipe? Nothing, really. Except, just like my nephew, it’s irresistible. ๐
Enjoy!
One Bowl Brownies
Adapted from the Baker’s Chocolate Recipe
Ingredients
- 4 squares (112 g)ย Baker’s Unsweetened Chocolate
- 3/4 cup butter
- 2 cups sugar
- 4 eggs
- 1 tsp vanilla
- 1 cup flour
- 1 cup chopped pecans
Directions
- Preheat oven to 350 degrees F.
- In a microwave safe bowl, microwave your chocolate with butter until melted. Be careful not to burn it by doing this is 20 second intervals and then stirring.
- Add sugar, and then eggs and vanilla. Mix well until eggs are well blended.
- Then slowly add in the flour, stirring so that there are no clumps. Add nuts.
- Pour into a pre-greased pan and bake for 25 to 30 minutes.
And that’s it! It’s a very quick recipe, and is easily my favourite one, since it’s easy and doesn’t require too much work or too many pots and pans. By adding that extra egg, the brownies become really fudgy and chewy, which is how good brownies should be.
Now that that’s done, I’m off to moon over my nephew’s pictures. ๐
